【摘要】要目的。本研究參考相關文獻,編製「客家節慶米食喜好量表」、「個人飲食偏好量表」「客家文化知識量表」作為研究工具。利用問卷調查法,共得有效樣本631份,依據問卷填答結果,以描述性統計、獨立樣本t檢定、單因子變異數分析、薛費氏事後檢定法、Pearson相關係數,對本研究問卷資料進行統計分析、解釋與討論,以驗證研究假設是否成立。本研究主要發現與結論如下:一、屏東地區高職生對客家節慶米食,整體上還算喜歡。其中最喜好的是粽子;最不喜好的是發粄。二、屏東地區高職生最偏好的飲食是口感酥脆食物;最不偏好的是食物沾客家桔醬。三、屏東地區高職生對客家文化知識整體上是不熟悉。其中最熟悉者是客家桐花祭;最不熟悉者是哈客網路學院資訊。四、屏東地區高職生父母是否為客籍、居住地區不同、是否會聽講客語、家裡節慶米食來源不同、家人是否食用節慶米食,對客家節慶米食之喜好有顯著差異;不同性別對客家節慶米食之喜好有部分差異;國小是否上過客語鄉土課程、家中是否有祭拜習俗,對客家節慶米食之喜好無顯著差異。五、屏東地區高職生偏好傳統口味飲食、改良客家口味飲食、客家菜餚、中式飲食者,對客家節慶米食喜好度愈高。六、屏東地區高職生對客家文化知識愈熟悉者,對客家節慶米食喜好度皆愈高。...

【外文摘要】This study aimed to explore the preferences of Hakka festival rice food for the vocational high school students in Pingtung area. Diet is the primary livelihoods of the people. The Hakka people make different festival rice food according to their different customs. Whereas, due to the prosperity and affluence in Taiwan, will these Hakka teenagers who are influenced by many foreign cultures still accept their traditional Hakka festival rice food? For those students who have different family background, various preferences of food and different familiarity for the Hakka culture will influence their choices for Hakka festival rice food? All above is what this study for.This study will use the reparation of "Hakka festival rice food preferences Scale", "personal food preferences Scale", and "Hakka cultural knowledge scale" as a research tool. The questionnaire survey is employed in this study, based on convenience sampling. 631 effective questionnaires had returned. The Questionnaire data was analyzed by descriptive statistics, the independent-samples t-test and one-way ANOVA. Scheffe's post-test method, Pearson correlation coefficient for the study questionnaire data for statistical analysis, interpretation and discussion, to verify the hypothesis is established.The analysis results concluded as followings:First, the vocational high school students in Pingtung area aret like the Hakka festival rice food a. One of the most favorite is the dumplings; least favorite is Faban.Second, the vocational students in Pingtung area are most preferred the taste of crispy foods; the least preferred food is Hakka orange sauce dip.Third, the vocational high school students in Pingtung area aren t familiar with e the Hakka cultural knowledge . One of the most familiar is the Hakka Tonghua festival; the most unfamiliar is Kazakh Institute network.Fourth, the Hakka parents, living regions, the sources of festival rice food, and the diet of the family will influence the preference for Hakka festival rice food; The gender will give some influence for the preferences; Also, the students who had taken the Hakka native language courses in Elementary School and the family who worship their ancestors make no significant difference for the result.Fifth, Pingtung vocational high school students who preferred the traditional taste of food, improving Hakka food taste, Hakka cuisine, Chinese diets like the Hakka festival rice food best.Sixth, the more familiar for Hakka cultural knowledge these students have, the higher acceptance for the Hakka festival rice food they have....
