客家擂茶的起源、价值与传承研究：以广西贺州客家为例

【摘要】值和意义。然而,综观保留擂茶习俗的各个客家区域,擂茶的传承现状却不容乐观,它在许多区域的传承力越来越弱甚至出现断裂,发展遭遇前所未有的“瓶颈”。本文将按照擂茶的历史源流、社会价值、现代传承问题的思路来进行,不仅要理清擂茶习俗的历史脉络,发掘擂茶习俗的价值,更重要的是希望以笔者田野调查地广西贺州为典型例证,并结合其他保留擂茶区域的现状,来阐述擂茶习俗传承中所遭遇的问题,进而深入发掘原因并提出粗浅的建议,以求擂茶习俗受到重视和保护,更好的传承和发展下去。本文主体分为七个部分：第一部分先简单介绍擂茶的种类和制作方法,然后追溯擂茶习俗的历史源流,按照各朝代顺序阐述了擂茶的发生、发展和变化过程；第二部分概括介绍一下客家和湖南土家、苗族等少数民族擂茶的异同,再说明客家擂茶的特征,并简单分析擂茶能够在客家人中保留下来的原因；第三部分概述客家区域擂茶习俗的保留状况,引出田野调查地广西贺州的擂茶现状；第四部分仍然以贺州和其他区域为例,阐述擂茶的养生、文化和经济价值；第五部分以贺州为例,简单介绍擂茶习俗在此区域的传承现状不容乐观,分析原因并提出解决方法；第六部分是由擂茶习俗引起的有关于中国传统饮食文化的一点思考,并将擂茶习俗的传承和发展与“文化强国建设”结合起来；第七部分即文章的结语。擂茶习俗拥有悠久的历史,具有养生、经济等价值,蕴含深厚的文化底蕴,这些都是保留擂茶习俗的各区域、各时代的共同之处,虽然在现今社会的发展中,各地出现了看似多种多样的擂茶传承问题,但整体而言,它们具有基本相同的主观、客观原因。笔者田野调查地广西贺州,其擂茶传承的现状绝对不是个例,而是具有一定的代表性,传承力变弱也是各个擂茶习俗保留区域普遍存在的问题,当然,碍于学识尚浅,笔者所分析的原因、所提出的对策是粗浅的,不可能解决所有不同地方的实际问题,只是希望起到抛砖引玉作用,引起大家注意和重视,从而各抒己见,为擂茶习俗也为类似传统饮食习俗的传承和发展贡献力量。...

【外文摘要】Grinded Tea is a miracle in the Hakka diet culture,and this special diet custom is only retained in Hakka,which is rarely retained in other Ethnic groups.Grinded Tea is a legacy of tea drinking in ancient tines,which has a very long history and a deep culture. As a ancient customs of drinking tea,it is traditional of course,but it has great health economic and cultural value for the modern people. However, in the various places where retains the custom of Grinded Tea, the inheritance is not optimistic, transmission capacity is more and more weak,even the appearance of fracture. In short it has a development bottleneck now. In this paper, I will describe the origin and history of Grinded Tea,then elaborate the values, analysie the problem of inheritance and put forward the countermeasures. The purpose of the article is combing the history of Grinded Tea, mining the depth value in health economic and culture,but more importantly,I will use the information in field work in Hezhou,Guangxi province, and combine with the actual situation where retains Grinded Tea custom.After the analysis,I will find the problems in the inheritance of Grinded Tea, explore deep-seated reason and put forward the reasonable solutions. My ultimate goal is to drow peoples’attention and protection to Grinded Tea,to have a better inheritance and development.This thesis includes seven parts:The first part simplely introduces the method of making all kinds of Grinded Tea,then trace back to the custom’s historical origin,elaborating the process of Grinded Tea’s producing、development and changing according to dynasty order;The second part compares Hakka Grinded Tea with other Grinded Tea in Tujia and Miao ethnic groups,then summarizes the the characteristics of Grinded Tea,at last analyze the reasons why Hakka could Retain the Grinded Tea customs;The third part summarizes the basic conditions in many Hakka area where retains Grinded Tea customs, then followed by the containing situation of Grinded Tea in Hezhou where I made a field investigation;The fouth part elaborates the Grinded Tea’s values in Health preserving、economic field and culture field;The fiith part takes the retaining situation in Hezhou as an example, simply introduces the present situation which is not optimistic in inheriting, then find out the reasons and solutions;The sixth part elaborates the reflections on Chinese traditional diet culture because of Grinded Tea,and combinates the Grinded Tea custom with the national policy which is to construct cultural power;The seventh part is the last part in the paper,which is the end and the conclusion of the article.Grinded Tea custom shares many common characteristics,such as a long history, grate value in economic and health, a profound culture and so on. Although there are several kinds of problems in Grinded Tea’s inheriting, they have basically the same subjective and objective reasons in general. find that the problem of Grinded Tea’s inheriting in Hezhou is common as well as other areas,it has the certain representation. Inheritance force becoming weak is a problem in common in most of areas where contain the Grinded Tea custom.Of course, due to my poor scholarship,my analysis of the reasons and the proposed solutions are shallow,which are impossible to soluve all the problems in different areas.All that I do is to throw away a brick in order to get a gem,I hope Grinded Tea custom can drow erevyone’s attention,we all make suggestions and take a positive action, then contribute to the preservation and development of Grinded Tea and other excellent traditional culture in China....
